Funfetti Banana Bread

Funfetti Banana Bread

This banana bread is so easy to make from a box of cake mix. So festive and tastes like cake! 

Ingredients

  • 1 box funfetti cake mix, just the dry mix (not the ingredinets on the back of the box)
  • 3 large eggs
  • 1/3 cup vegetable oil
  • 1 cup mashed bananas, about 3 medium bananas

Glaze

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/4 cup sprinkles

Instructions

  • Preheat oven to 350 degrees. Spray a 9X5-inch loaf pan with baking spray.
  • Using an electric mixer, beat cake mix, eggs, and vegetable until well mixed.
  • Add banana and beat just until mixed in. 
  • Pour batter into prepared pan. Bake for 40 to 45 minutes.
  • Let cool 5 to 10 minutes and then remove from pan.
  • To make glaze, whisk powdered sugar and milk together. Drizzle over banana bread. Scatter the sprinkles on top.

Notes

For best results use very ripe bananas.

Deviled Pork Chops

Deviled Pork Chops

Deviled Pork Chops are coated with buttery Panko crumbs and have a nice spicy kick. 

Ingredients

  • 3 tablespoons salted butter
  • 3/4 cup Panko crumbs
  • 1/4 cup Dijon mustard
  • 2 teaspoons packed brown sugar
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teapsoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 4 3/4 to 1-inch thick pork chops, can use bone-in or boneless

Instructions

  • Preheat oven to 275 degrees. Spray a baking rack with cooking spray and place it inside a rimmed baking sheet.
  • Melt butter in a small nonstick skillet over medium heat. Add Panko crumbs. Stir and cook until Panko crumbs turn golden brown. Set aside.
  • In a small bowl, stir together dijon mustard, brown sugar, dry mustard, garlic powder, salt, pepper, and cayenne.
  • Blot pork chops dry with paper towels. Brush tops and sides with mustard mixture. Sprinkle just the tops with panko crumbs.
  • Place on baking rack and bake for 40 to 50 minutes or until internel temperature reaches 140 degrees.

Notes

If you don't have a rack to cook the pork chops on, you can place them directly on the baking sheet.

Ingredients

  • 1/4 Cup Canola Oil
  • 1/4 Cup Unsalted Butter Softened
  • 1 Cup White Sugar
  • 2 Egg(s)
  • 1 Tsp Vanilla Extract
  • 1 1/2 Cups All Purpose Flour
  • 1 Tsp Baking Powder
  • 1/2 Tsp Salt
  • 1/2 Cup Buttermilk
  • 1/2 Tsp Ground Cinnamon
  • 1/2 Tsp Molasses

TOPPING

  • 1/2 Cup Unsalted Butter Melted
  • 1/4 Cup White Sugar
  • 1/4 Cup Light Brown Sugar
  • 1/2 Tsp Ground Cinnamon

how to make this recipe

  • Preheat oven to 350°F.
  • Grease a loaf pan with your favorite cooking spray and set aside.
  • In large mixing bowl, mix oil, butter and sugar until well combined. Add eggs and vanilla and mix until smooth. Gently add in dry ingredients and buttermilk until a nice smooth batter has formed.
  • Add 1/2 cup of the batter and place into a separate smaller bowl. To that small amount of batter, stir in cinnamon and molasses.
  • Pour half of the batter into the bottom of the loaf pan. Spoon half of the cinnamon batter in small dollops over the batter. Pour remaining plain batter over the top. Put the remaining cinnamon batter on top of the regular batter.
  • Using a butter knife, swirl two batters together. Bake for 45 to 50 minutes or until toothpick comes out clean.
  • Pour melted butter into a large shallow dish. Stir sugar, brown sugar and cinnamon together in a separate large shallow dish.
  • Let the loaf cool 10 minutes before removing loaf from pan. The loaf should be warm to the touch. Dip each side of loaf into melted butter. Spoon remaining melted butter over the edges to ensure the loaf is totally coated in butter.
  • Place the loaf in the cinnamon-sugar mixture, one side at a time until fully coated. Slice into pieces and serve warm or at room temperature.

Notes

→ If you don’t have Buttermilk on hand, you can use this trick as a substitute: Add one tablespoon of lemon juice to a measuring cup. Add milk and fill to the 1 cup measurement line. Stir the mixture together and let sit for 5 minutes.
