This Meat Lovers Pizza Casserole tastes just like a pizza! It’s meaty, salty, cheesy and filling. You can easily lighten it up by using turkey sausage, whole wheat pasta, and turkey pepperoni if you would like. You can also make this a vegetarian dish by taking out the meat all together and adding your favorite vegetables. I’m thinking green peppers and mushrooms would be pretty darn tasty.


Ingredients
  • 2, 24 ounce jars Prego Traditional Pasta Sauce
  • 1 pound Italian sausage
  • 2 teaspoons minced garlic
  • 1, 16 ounce box rigatoni pasta
  • 1, 12 ounce bag shredded mozzarella cheese
  • 1 bag pepperoni
  • 2 tablespoons Olive oil
Directions
  1. Preheat oven to 350 degrees.
  2. Drizzle olive oil in a large saute pan and place over medium heat. Add sausage and cook until browned. Next add minced garlic and saute for an additional minute; set aside until pasta is done.
  3. While sausage is browning, bring a pot of water to a boil and cook the pasta for seven minutes – the pasta should be well under-cooked. Drain pasta and put back into the large pot.
  4. Count out 18 pepperoni and place to the side. Take the leftover pepperoni and cut it into chunks.
  5. To the pot of drained pasta add the browned sausage and garlic, two jars of Prego Traditional Pasta Sauce, sliced pepperoni, and a handful of mozzarella cheese and stir.
  6. Put pasta into a 9×13 dish, top with remaining mozzarella cheese and pepperoni slices. Bake at 350 degrees for 15 minutes or until cheese is melted and pepperoni is crispy.

Starwberry Shortcake Shots

Strawberry Shortcake Shots are a 3-ingredient cocktail with the taste of Spring. Made from fresh strawberry puree, cake vodka, and Tequila Rose, this drink tastes just like strawberry shortcake in a glass. 

Ingredients

  • 1 1/2 cups frozen strawberries, partially thawed
  • 1 part cake vodka
  • 1 part Tequila Rose
  • whole strawberries for garnish

Instructions

  • Place strawberries in a food processor and process until smooth.
  • Add a spoonful of pureed strawberries to a shot glass. (You want about equal parts of each of the 3 ingredients.)
  • Add  cake vodka to fill the glass 2/3's full.
  • Top off with Tequila Rose.
  • Garnish with strawberry.

Notes

You should have enough strawberry puree for at least 6 shots.

Pineapple Pretzel Fluff is an easy to make dessert salad tha's both sweet and salty with a little crunch. 

Ingredients

  • 1 cup crushed pretzels
  • 1/2 cup butter, melted
  • 1 cup granulated sugar, divided
  • 8 ounces cream cheese, softened
  • 1 (20-ounce) can crushed pineapple, drained
  • 1 (12-ounce) container Cool Whip, thawed

Instructions

  • Preheat oven to 400 degrees. Line a 9x13-inch baking pan with parchment paper.
  • In a medium bowl, stir together pretzel pieces, butter, and 1/2 cup sugar. Transfer mixture to prepared baking pan. Press down gently on it and spread it out some. It does not need to cover the bottom of the pan.
  • Bake for 7 minutes. Let cool.
  • In a large bowl, use a hand-held mixer to beat cream cheese and remaining 1/2 cup sugar until smooth and creamy.
  • Fold in Pineapple and Cool Whip. Refrigerate for at least 1 hour. 
  • Just before serving, crumble the pretzel mixture and mix into pineapple mixture. I like to reserve some of it to sprinkle on top.

Notes

To drain the pineapple, I like to place it in a fine-meshed sieve set over a bowl. Let it sit there a good 5 to 10 minutes so that all the excess liquid drains off. Can be made 24 hours in advance. Keep pretzel mixture in a ziptop bag and mix in just before serving. I use pineapple packed in pineapple juice, NOT the kind in heavy syrup.

Deep Fried Jalapeno Slices

Deep Fried Jalapeno Slices, aka Bottle Caps, have a super crispy coating and really pack the heat. Dip them in Ranch dressing for a cool finish to this spicy appetizer. 

Ingredients

  • 1 large egg
  • 1 (12-ounce) beer
  • 1 tablespoon baking powder
  • 1 teaspoon seasoned salt
  • 1 3/4 cups all-purpose flour
  • 8 to 10 jalapenos, sliced
  • vegetable oil
  • Ranch dressing for serving

Instructions

  • in a medium bowl, whisk together egg, beer and baking powder.
  • When smooth, whisk in seasoned salt and flour.
  • Pour 2 inches of vegetable oil into a Dutch oven. Heat oil to 365 degrees F.
  • Add jalapenos to batter.
  • Fry the jalapenos in batches. Do not crowd the pan. Fry until golden brown on each side. Remove to a paper towel-lined plate.
  • Serve with Ranch dressing.

Ingredients

  • 1 box fudge cake mix
  • ingredients to make cake (eggs, vegetable oil, and water)

Frosting

  • 8 tablespoons salted butter, softened
  • 1 (8-ounce) package cream cheese, softened
  • 1/2 cup unsweetened cocoa powder
  • 1 (16-ounce) box powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon almond extract
  • 1 (12-ounce) package mini chocolate chips
  • 3/4 cup semi-sweet chocolate chips

Instructions

  • Prepare cake according to package directions in 2 9-inch cake pans. Cool completely.
  • Using an electric mixer, beat butter and cream cheese until smooth.
  • Beat in cocoa powder.
  • Gradually beat in powdered sugar.
  • Beat in milk and almond extract.
  • Spread frosting on top of one layer of cake. Place second layer on top and spread frosting on top and sides of cake.
  • Press mini chocolate chips on the top and sides.
  • Melt the 3/4 cup chocolate chips in the microwave or a double boiler and drizzle on cake.

Crock Pot Cubed Steak

Ingredients

  • 1 pãcket of ãu jus grãvy mix
  • 1 cãn creãm of chicken soup
  • 1 cãn French onion soup
  • 1/2 cup wãter
  • 1 ½-2 pounds cube steãk
  • To thicken grãvy:
  • 3 tbsp cornstãrch
  • 3 tbsp cold wãter


Instructions
  1. In the bottom of ã 6-quãrt slow cooker, combine creãm of chicken soup, French Onion soup, pãcket of ãu jus ãnd wãter.
  2. Stir well.
  3. Put cubed steãk in slow cooker with grãvy mixture.
  4. Cover slow cooker ãnd cook steãk on low for 6-8 hours.
  5. ãfter cooking, it's time to thicken grãvy. In ã smãll bowl, whisk together cornstãrch ãnd cold wãter. Stir mixture into crock pot.
  6. Turn the setting to high ãnd cook for 30 minutes (until grãvy is thickened.)
